Once the oil and lemon juice have coated the bulgur grains, add five chopped tomatoes (seeds removed), three chopped scallions, one cup of chopped fresh parsley, and one cup of chopped mint leaves. Store in the refrigerator.

#4 – Teff

Teff is a variety of millet that comes in brown, red, or white. Thanks to its sweeter flavor, it’s often cooked as a porridge, but you can also use it in breads and muffins or as polenta.
